Ingredients

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tbsp sugar
  • a pinch salt
  • 1 cup milk
  • 1 egg
  • 1 ripe banana, mashed
  • 1 tbsp butter, melted

Steps

    In a big bowl, mix the flour, baking powder, sugar, and salt.

    In another bowl, mash the banana until smooth, then whisk in the milk, egg, and melted butter.

    Pour the wet ingredients into the dry ingredients and stir just until combined - a few lumps are okay.

    Heat a non-stick pan or griddle over medium heat and lightly grease it.

    Scoop about 1/4 cup of batter per pancake onto the pan.

    Cook until bubbles form on top and the edges look set, about 2 minutes.
