Ingredients
- 2 large flour tortillas
- 1 cup shredded cheddar cheese
- ½ cup bell pepper, diced
- ¼ cup corn kernels
- 1 tbsp butter or oil
Steps

Lay one tortilla flat on a clean surface.

Sprinkle half the cheese evenly over one half of the tortilla.

Scatter the diced bell pepper and corn over the cheese.

Sprinkle the rest of the cheese on top, then fold the tortilla in half to close it like a book.

Heat the butter or oil in a pan over medium heat.

Carefully place the folded quesadilla in the pan and cook until golden, about 2-3 minutes per side.

Flip carefully with a spatula and cook the other side until the cheese is melted and gooey.

Repeat with the second tortilla, then let cool slightly and cut into wedges before serving.

- Sprinkling the cheese and veggies onto the tortilla

- Cutting the cooled quesadilla into wedges with a butter knife
Tips & Notes
- Swap in whatever veggies your kids like best - shredded carrot and spinach work well too.
- Let the quesadilla cool for a minute before cutting so the cheese doesn't ooze out everywhere.
