Ingredients

  • 2 large flour tortillas
  • 1 cup shredded cheddar cheese
  • ½ cup bell pepper, diced
  • ¼ cup corn kernels
  • 1 tbsp butter or oil

Steps

  1. 1

Lay one tortilla flat on a clean surface.

  2. 2

Sprinkle half the cheese evenly over one half of the tortilla.

  3. 3

Scatter the diced bell pepper and corn over the cheese.

  4. 4

Sprinkle the rest of the cheese on top, then fold the tortilla in half to close it like a book.

  5. 5

Heat the butter or oil in a pan over medium heat.

  6. 6

Carefully place the folded quesadilla in the pan and cook until golden, about 2-3 minutes per side.

  7. 7

Flip carefully with a spatula and cook the other side until the cheese is melted and gooey.

  8. 8

Repeat with the second tortilla, then let cool slightly and cut into wedges before serving.

Kids can help with:

  • Sprinkling the cheese and veggies onto the tortilla
  • Folding the tortilla closed
  • Cutting the cooled quesadilla into wedges with a butter knife

Tips & Notes

  • Swap in whatever veggies your kids like best - shredded carrot and spinach work well too.
  • Let the quesadilla cool for a minute before cutting so the cheese doesn't ooze out everywhere.
